It was the year 1972 when Cantine Paolini announced its first harvest, marking a milestone in the company’s history. From small parcels, as well as rows, juicy grapes of Cataratto, Inzolia, Nero d’Avola and Frappato are still carefully curated to give life to the wines of the 72 Filara line. The pressing of the Inzolia grapes is very soft and the slow fermentation at 15 °c lasts about 14 days. The wine ages at controlled temperature, with a slight passage in cask for about 3 months. Refine for six months in the bottle. Intense straw yellow color, intensely fruity aroma with notes of apple, peach, melon, jasmine and honey. Fruity and fragrant on the palate, with good acidity and persistence. Pairings: it goes well with white meats, grilled fish and also with Asian cuisine.
